Why is it important?

Unless the production operation is fully automated there will always be handling of food by human beings. Therefore personal hygiene practices are critical to ensuring safe food.

Facilities must define, document and train staff to ensure product does not get contaminated during handling by staff.

Establishing hygiene or GMP protocols for food production or processing facilities is also required by regulatory bodies.
